We believe it is vitally important to maintain our honey as it exists in the beehive, that's why we keep our Manuka honey natural and raw.
We do not heat above 35°C or fine filter our honey - as this is known to remove nutritious bee pollen, enzymes and minerals.
We do not homogenise our honey as we feel it's important for you to be able to see the many varied colours and celebrate the different tastes of New Zealand Manuka honey.
Because our Manuka honey is raw, it can have a slightly grainy texture with naturally uneven crystals sizes. If you find our honey has naturally crystallised and prefer it to be a little more runny - simply warm our Manuka honey to 35°C, in warm water or a heating cupboard, and the crystals will melt into the background.
Remember: Mother nature designed her beehives to be kept at an optimal temperature of 35°C.
